Chocolate Pistachio Bites
These are such a perfect little snack and really easy to make, you just throw everything into the blender!
Sweetened naturally with dates and goji berries and packed full of nutrients and healthy fats to get you through the afternoon.
They're gluten free, dairy free and you could easily replace the nuts with pepitas or sunflower seeds for a nut free version.

Ingredients
Makes around 20
½ cup shelled pistachios
½ cup coconut flour
12 fresh dates
¼ cup goji berries
3 TB raw cacao powder
1 TB chia seeds
1 TB flaxseeds
1 TB coconut oil
1 TB tahini
1 TB hemp protein or hemp seeds
Pinch of salt
Approx. 80g dark chocolate 70% or higher, melted for dipping
Approx. ¼ crushed pistachios for dipping
Method
Blend everything together in a high-speed blender until very well combined but it can still be slightly chunky.
Roll the mixture into bite sized balls.
Dip half of each ball in the melted chocolate and then dip that same half in the crushed pistachios and place them on some baking paper on a plate to prevent them sticking. (You could also skip the melted chocolate and crushed pistachios if you wanted to save time).
Place in the fridge until the chocolate has hardened. Store them in the fridge or freezer.
