Whenever I make a slice that has hard chocolate on top, it's pretty common for the kids to just eat off the chocolate and leave the bottom. They ate the top AND bottom of this one though, so if it gets their approval it's gotta be good! Plus it's made from whole food ingredients, refined sugar, gluten and dairy free and there's no baking involved!
For the base
1 cup of peanut butter
1/8-1/4 cup of pure maple syrup depending on how sweet you want it
1/4 cup coconut flour
2 huge TB hemp protein (you could leave this out if you don't have any and just add a bit more coconut flour)
For the chocolate
1/4 cup coconut oil
1/8 cup maple syrup or to taste
1/4 cup raw cacao powder
1 tsp vanilla
Mix the ingredients for the base together and push it flat into a lined loaf tin
Then gently melt the chocolate ingredients together in a pot over a low heat. Once combined, pour over the base and sprinkle with hemp seeds if you have them.
Place in the fridge until the chocolate has hardened.
